Today's blog is guest-written by Gail Cirillo-Buff, Owner and wedding cake Extraordinaire at Cheesecake Etc. located in Charlotte North Carolina. We have been recommending Gail to our Charlotte NC brides and grooms for many years, not only because her delicacies are amazing and finely crafted but her attention to detail and client first attitude are exactly what we look for with our vendor partners.
Gail has been baking and decorating wedding cakes from her "home bakery" since 1997. Cheesecake Etc. began in Charlotte, NC as just cheesecakes, (thus
the name) and has evolved into a custom bakery specializing in wedding cakes, groom's cakes and high end specialty cakes for anniversaries, birthdays
and babies. They continue to offer cheesecakes and Gails self-proclaimed and "world famous" cannoli! Incidentally, we second that proclamation!
Gail personally bakes and decorates every wedding cake that leaves her shop. She also personally delivers and sets up every wedding cakes. Read more about Gail on her website here.
Not Your Mamma's Wedding Cake
By Gail Cirillo-Buff; Cheesecakes Etc.
So who has been looking through their parents wedding album? "LOVE" the fashion and hair styles but the cakes are downright scary! Who wants a plastic couple with a "deer in the headlights" look perched on top of their cake? How about tons of icing swags on a white on white cake? Or maybe your cake should sit on top of a fountain with bridges to smaller cakes. And every cake was white inside and out and dry.
NEWSFLASH- You have choices.
Your wedding cake should be a reflection of you. It can be simple, rustic, colorful, whimsical, elegant, sophisticated, blingy, metallic or modern. And the flavor and filling choices are endless. A good baker will help you design- yes I said design, the perfect cake for you. It can have multiple flavors and fillings, even in the same tier. It can be stacked in the traditional manor or separated with flowers or other items, it can be round or square or a combination of shapes. It can be made to look like a wedding dress or a skyscraper!!
The point is, have fun with it. Search the internet and the websites of your favorite baker for designs that you love. Bring those ideas to your baker when you have your tasting (yum) and create your one of a kind masterpiece.
When you select a baker, ask if they bake from scratch. If you are working with a home baker, make sure they are licensed, health inspected and properly zoned. How long have they been in business? Find out the cost of delivery and if they can supply a cake stand for your cake. Ask how the cake is internally supported. You don't want that puppy leaning or falling over. Ask if they can work with fondant and create sugar flowers and GET REFERENCES!!!
And finally- the cake is but one small part of your special day. Enjoy the journey.
